Looking for a healthy Pinoy Dessert Recipe? This Ukoy na Kalabasa is something healthy for the kids to munch on for a Saturday TV watching binge! It’s a great healthy Filipino snack and can double as a filling low fat cholesterol free carbohydrate.
You may be familiar with crispy ukoy, usually shrimp, as an afternoon merienda being sold in the streets in the afternoon. This recipe is different. It is not dipped in vinegar, and taste more like a dessert instead of appetizer.
This Langkalababasa Fritter is made with yummy langka and kalabasa (squash). You can also replace kalabasa with sweet potato. It’s a healthy food that’s easy to make, and a good Filipino recipe for kids.
How To Cook Crispy Kalabasa Okoy
Peel and slice kalabasa into small julienne. Sift flour, sugar, baking powder and salt. Combine eggs, milk and melted margarine. Pour over dry ingredients. Beat until smooth. Add langka and peanuts to batter and mix well.
Heat oil in a skillet. Measure 1/2 cup of squash and dip into the batter. Using a strainer, lift and transfer fritter into pan. Fry until golden brown. Drain then sprinkle with sugar.
